Creamy one pot phad thai

I love thai food. And this easy recipe is perfect for a quick and dirty vegan dinner. The recipe is inspired by the amazing contentednesscooking.com.

 

Ingredients

  • Sweet potato pasta
  • 1 big green pepper
  • 1 broccoli head
  • 1 chili
  • 6 garlic cloves
  • 3/4 cup (175 ml) coconut milk
  • 1/4 cup (60 ml) Sriracha sauce
  • 3 tablespoon peanutbutter
  • 2 tablespoon sesame oil
  • 1/4 cup (60 ml) water
  • 1 tablespoon ginger powder
  • 3 tablespoon soy sauce
  • 3 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • Salt and pepper
  • Olive oil for roasting
  • Crushed salted peanuts

 

Cook

  1. Boil the sweet potato pasta
  2. Mix peanut butter, sesame oil, water, ginger, soy, lemon juice, maple syrup and little salt in a bowl
  3. Cut the broccoli, green pepper and half the chili and roast in olive oil in a big wok
  4. Add the peanut butter mix to the wok and stir together
  5. Add garlic, coconut milk, Sriracha sauce to the wok and bring to a light boil for 3 minutes.
  6. Add sweet potato pasta to the wok and mix until creamy and ready to serve
  7. Taste with salt, pepper, the rest of the chili and soy sauce
  8. Serve you’re had thai with crushed salted peanuts.
