
I love thai food. And this easy recipe is perfect for a quick and dirty vegan dinner. The recipe is inspired by the amazing contentednesscooking.com.
Ingredients
- Sweet potato pasta
- 1 big green pepper
- 1 broccoli head
- 1 chili
- 6 garlic cloves
- 3/4 cup (175 ml) coconut milk
- 1/4 cup (60 ml) Sriracha sauce
- 3 tablespoon peanutbutter
- 2 tablespoon sesame oil
- 1/4 cup (60 ml) water
- 1 tablespoon ginger powder
- 3 tablespoon soy sauce
- 3 tablespoon lemon juice
- 1 tablespoon maple syrup
- Salt and pepper
- Olive oil for roasting
- Crushed salted peanuts
Cook
- Boil the sweet potato pasta
- Mix peanut butter, sesame oil, water, ginger, soy, lemon juice, maple syrup and little salt in a bowl
- Cut the broccoli, green pepper and half the chili and roast in olive oil in a big wok
- Add the peanut butter mix to the wok and stir together
- Add garlic, coconut milk, Sriracha sauce to the wok and bring to a light boil for 3 minutes.
- Add sweet potato pasta to the wok and mix until creamy and ready to serve
- Taste with salt, pepper, the rest of the chili and soy sauce
- Serve you’re had thai with crushed salted peanuts.
