Fried onion stuffed with guacamole and tomato salsa

Today I wanted a greasy snack. With a touch of healthy. (Unfortunately) I like anything fried. So I tried adding guacamole in a fried onion. And boy was it tasty!

Good alone – but I suspect even better on a warm piece of toast.

 

Ingredients

  • 3 big yellow onions
  • 3-4 avocados
  • 1 red onion
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 chopped tomatoes
  • 1 pack cherry tomatoes
  • 1 chili
  • 1 teaspoon chili flakes
  • 4 teaspoon garlic powder (or fresh garlic)
  • Small handful cilantro
  • Small handful parsley
  • 1 cup flour
  • 1 cup soy milk
  • Pack of bread crumbs
  • Vegetable oil (to fry)
  • Salt and pepper

 

Cook

  1. Peel onions (save one onion for tomato salsa) and squeeze 8-10 onion rings out. Put them on a plate
  2. Blend the avocados and add 2 teaspoon garlic powder (or fresh garlic), a tablespoon olive oil, 1 teaspoon salt and lemon juice
  3. Chop the two tomatoes, chili, half of the cilantro and the red onion and mix with avocados – add chili flakes and the guacamole is done
  4. Put the guacamole into the onion rings (fill them up) and put them into the freezer until firm
  5. Put flour, 2 teaspoon garlic powder and soy milk in a bowl and mix until smooth
  6. Turn over the firm onions in the bowl-mix
  7. Turn over the onions in bread crumbs
  8. Fry in vegetable oil and place on a plate with some paper towel to let them drip off
  9. Chop the cherry tomatoes, the last cilantro, the parsley, 1 onion, 1 teaspoon garlic and mix with a little olive oil and vinegar – and you’re tomato salsa is ready for the fried onion rings. Enjoy!
