
To eat vegan is often associated with a very healthy diet because of all the veggies and stuff. But you can actually eat real unhealthy as a vegan. If you eat too one sided – or end up only ordering fries because everything else on the menu contains either meat or dairy (…yes I have experienced this a couple of times these past weeks).
So when I cook at home it is important for me to make tasty, delicious soul food – but always with a healthy twist. This weekend we went out dancing Saturday – so Sunday was all about the healthy (but tasty) burger. Take a look at Day 16 for a chickpea-burger recipe.

Challenge Day 16: Health food store
We went out Saturday and did some serious hip shaking, so my legs were not meant for walking on Sunday. Luckily, we already found an amazing health food store during the week and bought some chickpea “beef” for a homemade burger. Yes please!
But if you are up for making a chickpea burger yourself I found this great recipe on minimalistbaker’s amazing blog. I’ll definitely try that next time.
