
My new obsession is chickpeas. They taste so good and works in so many ways. Today I tried mixing it with mashed sweet potato and the result was yummy.
Ingredients
- 1 can chickpeas (drained and dry)
- 1 can white beans (drained and dry)
- 1 chili
- 3 tablespoon olive oil
- 1 small chopped up yellow onion
- 3 garlic cloves
- 1 tablespoon sweet chili sauce
- 1 teaspoon cumin
- 1 tablespoon fresh chopped cilantro
- 2 big sweet potatoes
- Salt and pepper for taste
- 1 lemon
- Tahini dressing
- 1 pack of crispy cones or small tacos
Cook
- Boil the sweet potatoes with salt and mash when done
- Make the tahini dressing
- Sauté onion, garlic, chili and a little pepper in olive oil on a pan for a couple of minutes
- Add chickpeas, white beans, cumin, cilantro, lemon juice and sweet chili dressing and sauté 3 minutes
- Stuff your cones or your tacos with the sweet potato, spicy chickpea mix and top with tahini dressing and a little fresh cilantro.
