Flavorful Ramen with peanutbutter glazed shiitake mushrooms and tofu

Wherever I travel I always look for a good Ramen spot. This Japanese soup is just so flavorful – I love it. Not easy to find in Brazil though – so let’s make our own. My favorite is with peanutbutter glazed shiitake mushrooms and tofu.

 

Ingredients soup

  • 6 cups vegetable broth
  • 3 minced garlic cloves
  • 1 tablespoon olive oil
  • 1 tablespoon grated ginger
  • 1 tablespoon soy sauce
  • 1 cup shiitake mushrooms
  • 1 block firm tofu
  • 3-4 green onions
  • Glutenfree thin rice noodles
  • Sesame seeds for topping

 

Ingredients peanutbutter glaze

  • 1 tablespoon peanutbutter
  • 1 tablespoon water
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 garlic clove
  • 1 tablespoon rice vinegar

 

Cook

  1. Mix ingredients for peanutbutter glaze and set a side for a couple of minutes
  2. Saute garlic and ginger in a big pot or wok (I have a big wok where I can cook soup too)
  3. Add vegetable broth to the wok and bring to a boil – let it simmer for 15 minutes
  4. While soup is simmering cut the shiitake mushrooms and tofu in small pieces
  5. Sauté the mushrooms and tofu on a pan in a bit of olive oil
  6. When mushrooms and tofu have cooked a couple of minutes add the peanutbutter glaze to the pan and cook until sticky. The peanutbutter glaze gives extra flavor to the soup when you put in the mushrooms and tofu
  7. Add soy sauce to the soup
  8. Add the noodles to the soup and boil until soft
  9. Serve a bowl of Ramen with the soup and noodles, mushrooms and tofu, a bit of chopped green onion and sesame seeds for topping.
