
Comfort food does not have to be unhealthy. ๐ This butternut squash sauce with truffle oil is sweet, spicy and creamy. The perfect mix if you ask me.
Ingredients
- 1 big butternut squash
- 1 big white onion
- 2 garlic cloves
- 1 cup vegetable broth
- 2 tablespoon lime juice
- 2 teaspoon paprika
- 1 teaspoon cumin
- A handful cashew nuts (unsalted)
- 2 tablespoon truffle oil
- 1 tablespoon Sriracha sauce
- 1 teaspoon chili
- 1 tablespoon olive oil
- 2 teaspoon salt
- 1 teaspoon pepper
- Pasta of your choice
- A handful fresh basil for topping
Cook
- Boil water and let the pasta simmer until ready
- Cut the butternut squash and onion in small chunks – put in a baking pan along with 2 garlic cloves
- Sprinkle the content in the baking pan with olive oil, salt and pepper – bake in the oven at 200 degrees celsius for 20 minutes
- Put the butternut squash, onion, garlic, vegetable broth, lime juice, paprika, cumin, cashew nuts, Sriracha sauce, chili, 2 teaspoon salt and pepper in a pot and blend with a hand blender until smooth
- Heat the sauce and add the truffle oil
- When the sauce is warm, pour it over the pasta and serve with fresh basil on top.

Sriracha sauce is a kind of spicy sauce. You can buy it many places I think. At least I succeded in finding it both here in Brazil and in Denmark. Such a good addition to many dishes. ๐
