
In Denmark we have a traditional kind of pate called ‘leverpostej’ and it is awesome! We put it on warm bread with pickled beets. It is sooo not vegan though…
But now my fellow vegan food lovers I have a version that is very vegan and tastes even better.
To be perfectly honest… I stole the recipe from my mom (again…) who has perfected this over years. Thanks mom! 🙂
Ingredients
- 80 g rice flour
- 100 ml water
- 500 g mushrooms
- 3 medium yellow onions
- 1 garlic
- 100 g hazelnuts
- 4 vegan eggs (buy vegan eggs or make your own flax eggs)
- 250 ml vegan cream
- 2 teaspoon salt
- Pepper to taste
Cook
- Turn on the oven at 180 degrees celsius
- Blend the hazelnuts to flour
- Cut the veggies – mushrooms in halves, onions in small pieces and garlic minced
- Add rice flour, 100 ml water, mushrooms, onion and garlic to the blender/food processor with the hazelnuts and blend until you have a smooth mass
- Put it in a bowl and stir in the eggs, cream, salt and pepper
- Put a little olive oil in an ovenproof dish and add the mushroom-nut pate
- Bake the pate in the oven without a lid for 1 hour.
