Fluffy vegan pancakes with cardamom and vanilla

It’s time for pancakes again – and yes they taste just as amazing without eggs! Make them for a loved one and serve breakfast in bed. I know that is my only plan this weekend. ❤



  • 125 g (1 cup) flour of your choice
  • 1 tablespoon baking powder
  • 2 tablespoon sugar
  • 1/2 teaspoon salt
  • 240 ml (1 cup) almond milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla
  • 1 teaspoon cardamom
  • Vegan butter for the pan
  • Maple syrup
  • Raspberries for topping



  1. Mix flour, sugar, baking powder and salt in a bowl
  2. In another bowl mix almond milk, apple cider, vanilla, cardamom and stir
  3. Mix the dry and the wet ingredients in the same bowl and stir until smooth
  4. Pour a good batter onto a pan with a little vegan butter and make over medium heat
  5. When the top bubbles a little turn the pancake
  6. Serve with maple syrup and raspberries.
